Yippee! It finally happened. I was alone for dinner! I'm never alone for dinner. There is always someone to cook for. Some nights I get so sick of cooking.
I sewed all day. Mia got one of her dog beds recovered and pillows made for the other two. She's the only one that actually uses a dog bed. When I'm in my office, she floats between three of them. Seeing as how I have 3 small dogs, there are 3 beds in my office. Triniti and Grace (brats they are) have to lay in real chairs. As I am typing this post, I am perched on the edge of my chair while Triniti is lounging comfortably behind my backside taking up most of the chair. I know what you're thinking. You're probably right.
So after sewing all day, I find myself alone! Ha! No one wondering, what's for dinner? When is dinner? Ha! Sometimes when it's just me, I will still make a decent meal for myself. Tonight I decided I would just snack. I found some black olives and munched on those for a while. Then I found an avocado. I cut that up and ate it with some corn chips. That's when I got the idea for parsnip fries. I've had some comments from those who have made them and they sounded pretty good.
To make parsnip fries, cut the parsnips into quarters and remove the core. Then cut into long strips. Place on a baking sheet, drizzle with olive oil, salt, and garlic powder. Bake at 425 degrees till well browned. I think mine took around 15 minutes.
The verdict....they were pretty good! I could go for some spicy seasoning on mine. Next time that's what I'll try. Parsnips confuse my brain. When they are cut up, they look like a potato, but they have sort of a carrot taste. That confuses me when I first bite into it. They're sort of potato carrot. A parrot. It's going to take me a while to get used to that.
So, after the parsnip fries, I just had to have THIS. Oh yeah. They are cooling on my counter right now and smell so wonderful! Thanks Steve! And after the brownies, I have a whole bowl of leftover Halloween candy! Mom, if you're reading this, I know, I didn't have any protein for dinner. Can I count the nuts in the snickers bars from the Halloween candy as a protein? I think that counts :)
